Anti-aging recipe in vogue in Paris: tomato tofu

As of late, vegetarian dishes have been increasingly the center of attention, as people seek to eat more healthily. Rich in quality protein and vitamin B, tofu is one of the Parisienne’s favorite food products for occasionally replacing meat. It’s good, contains lots of calcium and is very easy to digest.

Preparation: 15 min + Cooking time: 30 min

Serves four
• 300 grams of tofu (11oz)
• 5 tomatoes
• 4 small white onions
• 2 tablespoons of olive oil
• 30 grams of candied ginger (1 oz)
• 1 small piece of fresh ginger
• 200 grams of quinoa (7 oz)
• salt and black pepper
Cook the quinoa in twice its volume of salted water for 20 minutes. Drain and keep warm.

Dice up the tofu. Rinse and dice the tomatoes. Remove excess seeds and juice. Peel and chop the onions, along with their stems. Peal and finely mince the fresh ginger. Cut the candied ginger into little sticks.

Heat the oil in a wok, or large pan. Add the chopped onions and diced tofu. Stir fry for five minutes over high heat. Add the tomatoes and ginger. Salt and pepper to taste. Lower heat and stir fry  five more minutes.

Spread the quinoa over the bottom of four plates. Pour the sautéed tofu and tomato sauce on top. Enjoy!
