Champs Elysees spiced citrus fruit salad

A great, seasonal “anti-aging health food” recipe. Growing older inevitably means a progressive functional decline, but we can still limit the damage by paying careful attention to our lifestyle, and part of this means eating right!
Although there may be differing definitions of the ideal diet, there is universal agreement about the primordial importance of plant-based foods. This is not limited to just fruit and veggies, but includes wholegrain products, herbs and spices, olive oil, dark chocolate, and beverages like green tea and red wine.

Here’s a salad recipe that’s great for getting back into shape after holiday overindulgence. Serve this dish fresh, as soon as you make it, to avoid losing the vitamin qualities!

Ingredients for 4 servings

• 2 pink grapefruits or pomelos
• 3 quality oranges
• 1 lime
• 1 pinch of piment d’Espelette (Espelette pepper)
• 1 pinch of curcuma
• 1 small piece of fresh ginger (about 2cm or 1¨)
• 2 tablespoons of olive oil

Preparation time: 25 min (no cooking)

Peal and grate the ginger.
Peal the pomelos or grapefruit and the organges using a sharp knife and totally removing all the white membrane under the skin.
Separate the fruit into sections with your knife. Arrange fruit sections in a circle on four square serving plates.
Sprinkle with lime juice, piment d’Espelette, curcuma and ginger. Add a few drops of olive oil. Enjoy!
